Rocky Ridge Dayman/Nightman recipe. Amazing

Whilst they have the White Labs WPL066 London Fog yeast, I couldn't find the Wyeast London Ale III (1318) on their website.

Looks to me like like Sydney Home Brew only stock White Labs liquid yeasts. They also have a range of dried yeasts but no other liquid yeasts.

So went with Grain and Grape who definitely have both.

I asked my local home brew shop if he could get the yeasts I wanted and had them within a week. I think he ordered from brewart.

 

First addition of dry hops is high krausen (day two near enough) second addition was at  EOF, then left at 14° for two days before two days cold crash

Most locally owned home brew shops are pretty keen to look after customers. If you ask for something they don't have they'd usually rather find it for you than have you run off and find another shop to frequent (in my experience anyway)

We used 2L because that's what the Thermomix held (great temp control but not necessary) Liam recommended 4.5L. less than 2L probably not enough

A bit more detail for those who want to try this either using the BrewArt Ingredients or all grain.

From Brewfather, there are a couple of recipes in the library for the Day Man DDH IIPA. In particular, there is one done by Pig Den Brewing, a prolific but trustworthy uploader to Brewfather. Apparently the recipe was taken directly from the recipe shared by Rocky Ridge.

According to the notes included in the recipe:

"Active Ferment Hops are at day zero: so basically at the time of pitching the yeast. "

So the first hop addition is done at the same time as pitching the yeast rather than at high krausen which makes it much easier to be honest. Second hop addition is as normal, a couple of days before end of fermentation when the Droid tells you to.

They’re a great store.

I purchased my kettle from them and a few other bits and pieces. Their customer service is great and shipping prices very reasonable too.

Got the Day Man IIPA Clone into my Droid last night, went with All Grain based on the Brewfather recipe I posted above.

Fermentables (4.7 kg)
3.5 kg - Gladfield Pilsner Malt
500 g - Gladfield Wheat Malt
500 g - Oats, Flaked
200 g - Caramalt

Hops (175 g)
Hop Stand
15 min 90 °C - 40 g - Galaxy
Dry Hops
Day 0 - 60 g - Galaxy
3 days - 75 g - Galaxy

The brew day started out well as I had no meetings scheduled for the afternoon but soon turned into pandemonium with work.

To make a very long day/story short, I missed getting the wort chiller into the boil and therefore sanitised so couldn't use that to chill the wort quickly and it was getting late the day so I ended up getting the hot wort it into the Droid at 60+°C and then used a custom program to chill the wort down to 21°C and then cancelled the program.

At 10:30 PM, I pitched the London Fog yeast into the Droid after pulling it out of the fridge much earlier in the day but it got cold yesterday evening here in Sydney so I put it into bed with me (and the Wife) as I was watching YouTube videos and keeping an eye on the Droid temps. At pitch, I also added the Day 0 hop addition.

Then did a custom program to Propagate at 20°C, Ferment at 18°C and selecting Dry Hop of course. Will then bump it up to 21°C after 4 days as per the recipe.

Can only hope that it turns out as well the one that @Benoz posted as that picture is mouth watering.

60 degrees C wort into the Droid?

Were you aware that the plastic and temperature sensor housings are only rated to 40 C max?

I hope your little Droidy is OK!

Oh damn, no I did not know that.

It seems to be functioning perfectly and dropped the temp well to pitching range. Hopefully the beer doesn't taste like melted plastic  😫

All looks good so far, a day and a half in and nice krausen has formed and the smell is amazing.

Looks like I'll be using this London Fog yeast more in the future.

Planning to get the Night Man IIPA Clone on after this one finishes. This is really where the Droid shines, being able to control temps so well, even when possibly exceeding some limits...  😁

No, not at the moment but I am thinking to look at getting a starter kit together with beaker and stir plate as well as some appropriate jars. I've seen a few good YouTube videos on how to do this, taking one commercial packet of liquid yeast, create a large starter that gets split across multiple jars for future use.

Just another thing to buy (and cop flack from the wife) but yes, will save money in the future.

JP and I went through a Nightman, dayman and JP's sabro version last light and we reached a few conclusions: sabro man is probably the best of the three (tastes like a pina colada I swear!) But all three are amazing. Also we'll use only the London fog yeast from here on out. Seemed to have less bitterness and suited the beer better.

Really like the idea of an all Sabro version.

I assume you used the same base recipe and just swapped in Sabro hops for Galaxy and Eclipse.

I wanted to ask @Benoz and @J P, with these brews in your respective Droids, do you put your hops straight in or do you put them into a hop sock/bag/ball of some sort?

Thinking that with that amount of hop on top of the trub, there will be a lot of sediment at the bottom, probably up past the level of the spout opening?

I’ll sometimes use a hop tube or bag. I did NOT in this case.  There’s a terrifying large amount of trub but it settled our nicely.  Used routine hop filter on bottling.  
 

this one’s a must.  Best beer I’ve made to date I reckon.   And yes pina colada is the right description.   
 

im tempted to do the next one better with motueka (lime and coconut) 

probably call that Thai Massage Man.

On a mid-week day off work so I'm all set for another brew day and this time it will be the RR Night Man IIPA Clone.

I've got the grain bill (keeping true to the same recipe used for Day Man), Eclipse hops and Wyeast London Ale III (1318) at the ready. Just prepping the Nano and water using a finally updated water profile from Sydney Water for the first quarter of this year. Yeah I know, typical Sydney Water, they only provide a water profile a quarter in arears so you just know you'll be out by a little but shouldn't be too much.

I really like the idea of an all Sabro version, all credit and copyright to @Benoz and @J P, so much, I also have the grain bill and Sabro hops ready to go purchased at the same time as the Night Man grains and hops.

But alas, both Night Man and Sabro Man will have to wait as the Day Man is still in the Droid and we're at day 6.5 so I'm guessing it will prompt for a Dry Hop tonight which I will hold off until tomorrow morning meaning a further 2 days at 17°C and then 2 day cold crash at 3°C.

I'm guessing Night Man will go into the Droid on Sunday if I'm lucky.

Doing all this brewing as next month is my 55th and I've invited a few mates over for beers and yet more beers.

A very successful brew day if I do say so myself. 

My pre-boil Gravity was off a bit, 1.074 when Brewfather predicted 1.076.

However, my sparge seemed to have worked a treat as my post-boil gravity is 1.090 when Brewfather predicted 1.089.

And I got just the perfect amount of wort to fill the wort cube ready for when the Day Man IIPA clone finishes in the Droid.

Oh yeah, I might have had a sneaky beer or 3 whilst brewing and post brewing today but hey, it was my Day Off.
