Captain 3 Droids
Have not done this one before so was in the Droid and kegged today after an 11day fermentation period. Will leave for a while before consuming (mmm). Will be interested in the result, the T.C. Artisan Reserve was very acceptable.

I’ll be brewing a few. Good winter drink as well but hey I’ll have stouts in summer and now lagers in winter, it’s what you enjoy.
Captain 3 Droids
Just brilliant, Amarillo hops just right. How many brews can you put in a top 10? I’ve got 20+ so far. lol
Eltham Brauhaus
I am 5 days into my T.C. Celebration Ale and I am experiencing an overflow eruption from the release vent. There is nothing about this in the Shem Sheet. I did add the 2 x H1 liquid hop sachets on day 4 (probably prematurely) so I am wondering if this was the cause. I have smelt and tasted a sample and it is fine. Any comments or does shit just happen?? Edited July 13, 2021 by Eltham Brewing House

I’ve brewed this twice with EOF at 11 and 10 days so going on that a 5 day overflow wouldn’t surprise, good sign of a very active Krause.

I was a bit surprised but not worried as the eruptions are a good thing. Its just that the Shem Sheet doesn't mention a possible overflow for this brew. In addition it states that its a 5 to 7 day brewing time and that's why I added the hops sachet at day 4.

The Shem Sheet quotes the BrewArt recipe profile (rightly so) however that’s just a guide so the reason I record my EOF times. Yeast performance can certainly play a part in fermentation starts and build up to strong activity.
Captain 3 Droids
It would seem from the lack of comments that a lot of brewers don’t brew this one. It is certainly worth while. A delicious drop, another for you lager brewers to get into. 1
Captain 3 Droids
Been a while since reporting on this one. Dry hopped with 20g ea of Amarillo and sequoia. Tropical sweetness with a nice finish on the palate.

Captain 3 Droids
I’m on my second imperial pint (besides the Coopers Pale Ales, it is “piss head Sunday”)and just find it quite exceptional. I’ve brewed it a few times now as per the recipe however the addition of sequoia hops has imo made it something special.

From my journal "80 gm Maltodextrin added at start up, hops sachets added end day 4, EOF end of 9 days. Tasted at 3months, brilliant. Even better at 4 months. Coffee and burnt caramel under tones At 5 months very smooth & malty."

What it is, ingredients, brew date, kegging date and rated out of 10. Have done for ever brew other than the rating, those I just know now are so good.

This one should be interesting. Realised use a E3 instead of X3. So see what we get. Will this put it near a West Coast style brew? With E1, 2 x E2, E5, E3 (not X3), Y2. Will be dry hopping with 20g ea Amarillo & Sequoia
Captain 3 Droids
Kegged today, had a reasonable overflow with this. Still have a few pints left of now an 8 week kegged brew. Love the lacing.
Captain 3 Droids
Keg another batch of this, 13/3 so at 6 weeks this is again a fine drop. Dry hop with 20g each of Amarillo and Sequoia
Captain 3 Droids
Can’t work out why a lot brewers of stronger styles don’t brew this? I think it’s an exception ale, then again it ain’t craft.

Captain 3 Droids
In the Droid again today with the E3 and not the X3 per recipe. This error had turned out great so why not again. I suppose it’s not quite a T.C. Celebration Ale but don’t know what else it would be. Dry hop day 6 29th 20g ea of Amarillo and Sequoia
