The Coopers barrel aged stout that can be found on draught around Adelaide is a favourite of mine. If this is anything like that then you're on to a pretty special stout.

Out of interest a few years ago I brewed 23l of a recipe for milk stout using a tin of Coopers stout. Incidentally I had just finished the last of the port from a 10l oak barrel so I put 10l of the stout in that with a cork/hole drilled for an airlock (further fermentation due to the sugar in the port.

This was bottled after 10 days with sugar drops for carbonation. After 6 weeks the stout still had a fairly strong port/spirit taste to it so I put the remaining bottles away. After 12 months delicious, after 18 months exceptional.

This is how I filled the bottles.

Brilliant.

I was thinking an oak barrel would be a great addition to the kit if you were to brew a lot of stouts.

Will do. Currently drinking the Ruby Porter at 11 weeks and it's good. Probably get better as well. I bottle all those high alcohol brews in long necks so that they can be tried at different intervals. Usually start at 4 weeks and go up by 2 week intervals or so. The advantage of finely getting some stock, i can have an easy drinker in the flo.

Agree, building up some stock makes selective drinking and maturing issues so much easier.

Just bottle my Special Old Stout 2-1/2 weeks ago, had to sample one yesterday. I am very happy with this brew, looking forward to tasting in another few weeks to see how it is doing.
