I put it down to bad yeast (Angel CS31 free with the kit), it is the only time I have used this type of yeast (have used CN36 with no issues), and was common across the split batches. I take notes, and am anal with cleaning and sanitising, so hoping it was the yeast and nothing I have done wrong. Ten years ago when I brewed using tins, I had one bad batch and did not brew again! I think having the keg setup made it a little easier, not having to dump and clean a bunch of bottles! Still devastating! i finally re-tapped my Abbey Dubbell after months of conditioning. Very boozy, can feel it after one glass. Very drinkable now, but not for me, and I struggle to condition long enough at the best of times, so will not do again. Tapped and bottled a Bombshell Blonde, very light in flavour, not beery enough for me. Keeping the bottles for goto when run out of everything else. FYI, below are some of FWK's I have done: Citra XPA dry hop 25gm Citra - Very nice, strong on the hops, conditioning required to mellow the flavours Citra XPA no dry hop - Delicious, can drink with minimal conditioning Mosaic XPA Dry hop 25gm Mosaic - Very nice, conditioning required to mellow the flavours Mosaic XPA Dry hop 20gm Mosaic - Very nice, hops just right Aus Pale Ale Dry Hop 25gm Vic Secret - infected Aus Pale Ale Dry Hop 25gm Simcoe - infected American IPA Dry Hop 24gm Citra and 25gm Centennial - Smelt and tasted amazing out of the fermenter, bottled and kegged, currently conditioning Citra XPA Dry Hop 20gm - conditioning Citra XPA no dry hop - conditioning Currently have another Aus Pale Ale in both droids (using Saf US-05), to be dry hopped with either Galaxy, Simcoe, Vic Secret, or Cascade. I also have a Pale Lager kit there ready to go, but holding off due to longer lager ferment and conditioning, as consumption is exceeding production at this time. I am looking forward to tasting a keg of AIB PaleAle with 20gm galaxy dry hop at a mates place this weekend. Not only were the steaks just tops but when the waiter came over and he was handing out the menus, I asked what beers were on tap (expecting to hear Carlton dry...draught...Iron Jack) and he asked what I drank, and when I said I prefer Lager/Pilsners he said " we have the Stone and Wood Lager on tap" and I was all " Haven't had that before, happy to give it a go" and he laughed and said "Mate, I'm going to be bringing you pints all night of this stuff" I mean, he was wrong, I wasn't ordering pints...I ordered jugs, not pints 1 Link to comment Share on other sites More sharing options...

Captain 3 Droids Posted June 6, 2020 Author Report Share Posted June 6, 2020 Just finished 10l of Stone and Wood Pacific Ale and tried simcoe rather than the galaxy for dry hopping. Don’t get me wrong galaxy is a top hop however a lot of the recipes call for it so I’m trying other hops that are comparable. The simcoe was a pleasant suprise and will certainly use it again. I’m assuming I’ll have to use the custom menu on the droid, so my question is: what temperatures do I set for propagation and fermentation, and at what stage in the process do I add the dry hops - will the droid tell me or do I do it on a specific day? as it’s a custom brew, how does the droid know when it’s ready for kegging. thanks , Ian Link to comment Share on other sites More sharing options...

I didn’t mention the custom mode temps if you want to go that way for the hop program. Propagation 21C, Fermentation 17C, Keg 18C, Store 4C. After 5 days, fermentation isn’t at its most active so no harm done. You may find a shorter fermentation if your yeast is dated 2020, last one was only 8 days. Go for it. Been a bit cold up this way so secondary may take a bit longer. Kegs and Bottles got pride of place next to the fire. Hi Robert, I’d wait for 6 weeks (including the 2 weeks carbonation) as I found at 4 weeks some further maturity was beneficial. I know it’s hard to hold off but worth the wait. Building stocks really help however if in a bit of trouble in that department, purchased brews is not an offence whilst waiting. Ps love the fire place. I reckon the bags I have have been opened for around 9months ( found them down the back, plus i used alternative hops for other beers ) the foil bag was wrapped tight , and put in 2 sandwich bags with air squeezed out both times ? Dont think they are smelling as "floral" as they did , but maybe I am thinking the smell they had after being in a Brew. They are Galaxy and Cascade i plan to use. Otherwise I will buy fresh I do exactly the same as you. Remember chilled or frozen hops (like food) have little aroma until room temp (also in a compact pellet form).
